Pork Carnitas
Objective:
Present Pork Carnitas crock pot recipe.
Conclusion:
This requires few ingredients and is a good way to make tender and tasty pork.

Servings: About 3 quarts
Ingredients
-
4 lbs of pork - thick cut boneless pork chops or pork butt
-
1 to 2 teaspoons kosher salt
-
1 teaspoon fresh ground black pepper
-
2 teaspoons cumin
-
2 teaspoons dried oregano
- 2 Tablespoons olive oil
- one large onion - finely chopped
- one jalapeno pepper - deseeded and finely chopped
- four cloves garlic - finely chopped

3/4 cup of orange juice
-
red bell pepper deseeded and chopped [optional]

green bell pepper deseeded and chopped [optional]
-
2 teaspoons cumin
-
2 teaspoons chilli powder
- another large onion - finely chopped
- 2 Tbls butter
Instructions

Rinse and dry the pork cutlets (or pork roast)

Season with salt and pepper
-
Season with combined oregano, cumin and olive oil.

Chop the onion, jalapeno pepper and garlic
-
Place pork into crock pot onto the wire rack
-
Dump chopped ingredients and orange juice over pork
-
Cover and Lock Crock pot lid, ensure pressure valve is set to close (pressure cook)
-
Set crockpot to meat/stew and Start
-
Crockpot will cook for 35 minutes under pressure then cycle to Warm mode
-
Use utensil to poke the pressure valve to release steam position.

Once steam has stopped, open crock pot and add the diced red and green pepper with cumin and chilli powder
-
Cover and Lock Crock pot lid, ensure pressure valve is set to close (pressure cook)
-
Set crockpot to meat/stew and Start
-
Crockpot will cook for 35 minutes under pressure then cycle to Warm mode
-
Use utensil to poke the pressure valve to release steam position.
-
Once steam has stopped, open crock pot.
-
Using two forks, pull apart the pork right in the crock pot.
-
Add small can of tomato paste by first mixing it with juice from crockpot
-
Allow to rest in Warm mode for 15 minutes
-
Remove portion of the pulled pork to fry in cast iron pan in 1 Tbls olive oil
-
Brown on one side, flip and cook for a minute then remove from pan
-
Add carmelized onions and beans [optional]
-
Saute finely chopped large onion in butter till soft, add 2 tsp brown sugar and 2 tsp balsamic vinegar
-
Add can of rinsed beans, heat for 5 minutes then add pork back
-
Heat briefly before serving or moving to next recipe

(e.g. heat a tortilla, add pork/bean mix and shredded cheddar to make a quesadilla)
