Fish Soup Recipe
Objective:
White fish soup recipe
Conclusion:
Here is my version of the base recipe shown at bottom
Have made this soup with tilapia or haddock; both work well.

Fish Soup
Ingredients
-
Meat
- 1/4 pound of Bacon
- 1 1/2 pounds Tilapia
- Vegetables
- 1 medium size Onion
- 2 large Jalapeno Peppers finely diced
- 1 large Green Bell Pepper diced
- 4 large Potatoes diced < 1/2 inch
- 3 Carots chopped
- 3 Celery stalks chopped
- Herbs
- handful of Parsley chopped
- sprig or two of fresh
- Oregano chopped
- Rosemary whole
- Spices
- 1 1/2 teaspoon Kosher Salt
- 1/4 teaspoon Fresh Ground Black Pepper
- 1 or 2 Bay Leaves
- Liquids
- 4 cups Chicken Broth or Chicken Bullion/hot water
- 3 cups of whole or 2% Milk
- 12 ounce can of Evaporated Milk
- Fats
Directions:

Prepare white fish

Thaw, rinse, dry.

Lightly Sprinkle with Kosher salt

Dust with black pepper; (dry italian seasonings optional)

Set aside Tilapia.
- Prepare the roux

Cook chopped strips of bacon in heavy bottom sauce pot.

Remove bacon when it is fully cooked

Add onions and peppers to sauce pot and saute until translucent (about 5 minutes)

Add 4 cups of Chicken Broth, diced Potatoes, chopped vegetables, herbs and finely chopped bacon; bring to boil then simmer 10 minutes

Add the Tilapia, cook until flakes (5 minutes)

Add seasonings and remaining liquids and butter, stir occassionally, simmer until hot. Serve.

- Mushrooms

Diced Summer squash or Zucchini
