Chicken Quesadilla
Objective:
Present the recipe for Chicken Quesadilla.
Conclusion:
This is a good recipe for chicken leftover from making chicken soup.
We tried this recipe out successfully; easy to make.

Ingredients
-
For each pound of cooked chicken
-
ground pepper to taste
-
salt to taste
-
large clove of Garlic minced.

1/2 Teaspoon Chilli Powder
-
1/2 Teaspoon Cumin
-
1/2 Teaspoon Oregano or Cilantro
-
1/2 Teaspoon Thyme (optional)
-
2 Tblspoon Olive Oil
-
1/2 Red or Yellow Onion Sliced and Diced
-
Large Green or Poblano Pepper Sliced and Diced
-
few spalshes of Lime Juice

1/2 cup of Shredded Cheddar , Monterey Jack or combination.
Directions

Mix the salt, pepper and herbs together in medium mixing bowl, add the cooked chicken, tossing to season evenly

Heat the Olive Oil in caste iron skillet; when hot add the diced peppers and onions, cook till significantly softened.

Add the minced garlic; cook a couple of minutes.

Add the seasoned cooked chiken; Add a few splashes of Lime Juice.

Cook till thoroughly warmed through; then remove from stove to a covered bowl.

Grate the cheese.

Form Quesadillas - fold tortilla shell in half - fill with 1/4 pound chicken/pepper mix and grated cheese.

Place the Quesadilla in hot caste iron skillet to brown on each side.

Serve immediately with any of - salsa, guacamole, sour cream, pica de gallo.
