Chicken Quesadilla

Objective:
Present the recipe for Chicken Quesadilla.
Conclusion:
This is a good recipe for chicken leftover from making chicken soup. We tried this recipe out successfully; easy to make.

Ingredients

Directions

  1. Mix the salt, pepper and herbs together in medium mixing bowl, add the cooked chicken, tossing to season evenly
  2. Heat the Olive Oil in caste iron skillet; when hot add the diced peppers and onions, cook till significantly softened.
  3. Add the minced garlic; cook a couple of minutes.
  4. Add the seasoned cooked chiken; Add a few splashes of Lime Juice.
  5. Cook till thoroughly warmed through; then remove from stove to a covered bowl.
  6. Grate the cheese.
  7. Form Quesadillas - fold tortilla shell in half - fill with 1/4 pound chicken/pepper mix and grated cheese.
  8. Place the Quesadilla in hot caste iron skillet to brown on each side.
  9. Serve immediately with any of - salsa, guacamole, sour cream, pica de gallo.
