Butternut Squash Soup
Objective:
Present the recipe for Butternut Squash Soup.
Conclusion:
This requires few ingredients and is a good way to consume alot of home grown butternut squash.

Servings: About 3 quarts
Ingredients
- one large onion - finely chopped
- stick of butter

1 teaspoon salt

1 teaspoon fresh ground black pepper

1 teaspoon fresh ground nutmeg

6 cups of chicken stock (can substitute 6 packets chicken bullion in 6 cups water )

3 lbs of peeled, seeded, cubed (1 inch) butternut squash

2/3 cup of half & half or whole milk [optional]

parmesan or cheddar cheese [optional]
Instructions
-
Saute one large chopped onion in a stick of butter
- Add squash, chicken stock, salt, pepper and nutmeg
- Cook at slight boil till squash is tender (15 to 20 minutes) ,
- Remove squash from soup, chop in food processer, return to soup.
- Add half & half
- Simmer for up to an hour
- Serve with grated cheese.
