Butternut Squash Soup

Objective:
Present the recipe for Butternut Squash Soup.
Conclusion:
This requires few ingredients and is a good way to consume alot of home grown butternut squash.

Servings: About 3 quarts

Ingredients


Instructions

  1. Saute one large chopped onion in a stick of butter
  2. Add squash, chicken stock, salt, pepper and nutmeg
  3. Cook at slight boil till squash is tender (15 to 20 minutes) ,
  4. Remove squash from soup, chop in food processer, return to soup.
  5. Add half & half
  6. Simmer for up to an hour
  7. Serve with grated cheese.
